Brisket – the holy grail of barbecue

The source of constant questions, always in the pursuit of perfection.

Do you wrap? Boat? Butchers paper? Hot and fast?

How long does it take? What internal temperature?

Pork Ribs – what is the 3-2-1 method?  Why are there so many spare ribs?  What happened to the other ribs?

This will be a class dedicated to two of the big ticket items of low and slow barbecue that we don’t cover in the Fundamentals class. 

There will be some food to start the day and we’ll culminate with a big feed of brisket, ribs and sides 

We’ll put on some beers.  

For all of you that have been asking for brisket masterclass to come back – we’re back, baby, with ribs.
